Lime & Berry Cupcakes

With some friends round for tea the other night I thought what better opportunity than to test my new Lime & Berry cupcake recipe.
I had an idea of cooking jam in the middle to create a yummy moist cake… think I might try Lemon curd next time!

Lime & Berry cupcakes

This Recipe makes 10-12 cakes depending on the size of your molds.

Cake – Ingredients
120g Butter
100g Caster Sugar
2 Eggs -preferably free range (think of the little chickens)
140g Flour
120g Mixed Berries (I used Raspberries & Blueberries)
Juice & zest of half a lime
Some yummy mixed berry jam – a small teaspoon for each cupcake.

Drizzle -Ingredients
Juice & zest of half a lime
40g Caster Sugar

Preheat you oven – Gas mark 4, 180 Celsius, 350 Fahrenheit

Cream the butter & sugar until pale in colour, add the eggs one by one mixing all the time. Sift in the flour and mix. Finally add the lime juice, zest & berries and give the mixture one last stir.

  • Tip – I save a few Blueberries and pop them on the top of the cakes when they are ready to go in the oven.

Scoop the mixture into cake cases and then add the yummy bit! a small teaspoon of jam in the middle of each cake, giving it a bit of a swirl with the spoon.

Bake in the oven for 15 minutes for small cakes and 25 minutes for muffin size.

  • Tip – to check the cakes are cooked use a tooth pick, place into the middle of each cake and if it comes out clean then they are cooked.

To make the drizzle simply mix the lime juice and sugar together – this looks like hardly any mixture but even a small bit on each cake will keep them nice and moist. Add the drizzle on top of each cake when they come out the oven & grate over some lime zest, the jammy bit will be SUPER HOT so don’t even think about eating them till they are cool.

Lime & Berry Muffins

  • To make the greaseproof paper cases, simply draw around a saucer or cup depending on the size of your molds. Cut-out one circle and try for size before cutting the rest, the paper should just peep over the mold roughly 1-2 cm

I am not a chef & you may want to tweak for you own personal taste. Please please remember if you are young then get an adult to help with cooking and using scissors.

French Alphabet

Design

My very special French friend had a baby this year and I decided to design an Alphabet so that little Anais has something cute and french for her new nursery.
I thought this would be easy, just draw something beginning with that letter… think again this was a mission, I don’t speak any French so I definitely learnt a few new words!
Like all good things that are a bit of a challenge, the hard work paid off as my friend loved it! and it will take pride of place in her nursery Yippee!
